Thanks to this coffee, we take you to discover the territory of Canario, a journey to 1,300 meters in the south of Minas Gerais. The natural processing method involves a meticulous drying process of the cherries, laid out on wooden patios for about 30 days until the desired bean moisture is achieved. The result is a uniquely aromatic profile for a sweet and balanced cup. The notes of cocoa and hazelnut stand out, sweetened by hints of licorice.
Canario is the flagship of the Cocapil cooperative, the beating heart of the region. Today, it involves over 1,200 passionate coffee producer members. With impeccable vertical integration, Cocapil carries forward projects for developing infrastructure and spaces, along with supporting associations and educational programs for the local community.
