Kiangombe Factory was established in 1998 and it is one of the many washing stations working with the smallholders’ families natives of the surrounding area. The word “Kiangombe” – which gives its name to the coffee – literally means “a land full of cows” with reference to the numerous cattle raised by the same small families of coffee producers, around 600. Thanks to the average high altitude, this region is characterized by its bright red colour and fertile subsoil, rich in nutrients. The high altitude allows ideal temperatures and rainfall suitable for the slow ripening of the drupes. When a factory processes coffees from many different small producers, sorting the cherries is the most crucial step in ensuring cup quality. This lot was processed by the fully washed method with double fermentation, where a dry fermentation is carried out after pulping. Once the coffee is washed in grading channels, it goes to be soaked in clean water for 48 hrs to ensure that no mucilage remains on the parchment. A full-bodied cup, with hints of blackberry, lemon, cassis.
